My favorite way to pass the time during the slow weeks in pregnancy is to compile useful resources for after baby is born. Enter these delicious lactation cookies! These are the best lactation cookies to boost your milk supply quickly. I used this recipe when I was breastfeeding Sophie and saw an increase in my supply by the next day. This time around I’m thinking of adding in some fresh fruit like chopped strawberries or blackberries.
These babies are such gold that I had to cut down from 1 a day to 1 every other day to avoid becoming engorged. I was able to feed my baby and then pump an additional 8oz of milk!
This recipe is chock full of healthy galactagogues, which are substances that stimulate milk production. These are so tasty that I caught my husband snacking on a few.
This recipe will make 2 dozen. I recommend starting with 1 every other day and increasing to once a day if needed. These will freeze, so don’t worry about them going bad.
Without further ado. Here is the recipe!
1 1/2 c. whole wheat flour
1 3/4 c. rolled oats
1 tsp baking soda
1 tsp salt
3/4 c. peanut butter
1/2 c. butter, softened
1 c. ground flax seed (I used this one)
3 T brewer’s yeast (I found this one is the best)
1/3 c. water
1 tsp cinnamon
1/2 c. cane sugar
1/2 c. brown sugar
1 tsp vanilla
2 large eggs
2 c. (12oz) chocolate chips
1 c. chopped almonds
Combine flour, baking soda, cinnamon and salt in a bowl.
In a separate large bowl, beat peanut butter, butter, sugar, brown sugar, vanilla, brewer’s yeast, flax and water until creamy.
Mix in eggs.
Gradually beat in flour mixture.
Mix in nuts and chocolate chips.
Slowly mix in oats.
Place Tbsp. sized balls of dough onto greased cookie sheets.
Press down each ball lightly with a fork.
Bake 12 minutes at 350F.
Allow to cool.
1/4 c. coconut milk could be substituted for the butter
1/2 c. unsweetened applesauce could be substituted for the eggs
1/3 c. honey could be substituted for sugar *IMPORTANT* reduce oven temp by 25 degrees and reduce water to 1/4 c. if using honey
Any nut could be used in place of almonds however, almonds are considered galactagogues
